I just have to share this recipe with you guys, it’s a treasure in our home.  We are all about pizza parties over here, typically on Friday nights.  It’s such a fun way to start off the weekend.

These flatbread crusts are so simple to make…and I rarely say that about baking.  They come out crispy and thin, and they taste amazing with just about anything piled on top.  I’ve tried this recipe with white, whole wheat and several gluten-free flour blends and they come out great every time.  I love knowing and being able to control exactly what is in our food and this recipe allows me to do just that.  Total winner in my book!

Simple Flatbread Pizzas

Adapted from Gourmet, July 2008

Ingredients

1 3/4 Cup Flour

1 Teaspoon Baking Powder

3/4 Teaspoon Salt

1/2 Cup Water

1/3 Cup Olive Oil + extra for brushing the tops

Directions

Preheat oven to 450 degrees with 2 baking sheets/pizza stones in the middle two racks.  In a large bowl, whisk together the flour, baking powder and salt.  Form a well in the middle by pushing the dry ingredients to the sides of the bowl and pour in the water and olive oil.  Mix with a spoon until combined and a ball of dough forms.  Place on a working surface and knead with your fingers about 5 times and divide the dough into three pieces.  Using a rolling pin, roll out each piece of dough onto a piece of parchment paper to your desired thinness.  Brush the tops with the extra olive oil, transfer the parchment paper/dough onto the baking sheets and bake  for 10-12 minutes or until the crust is golden and beginning to brown.  Top the crusts with your favorite sauce/toppings and transfer back to the oven until cheese is melted, about 2 minutes.  Serves 4-6.
