I really want to be one of those people that meal plans, makes from-scratch meals every night and has that picture perfect dinner with the family every night. I know…it’s pretty laughable when you consider the reality of two working parents, one working from home, and three kids, one of those a very active baby. Easy meals are my favorite – the ones that I can feel good about, but take me the least amount of time for our busy family of five.
I love feeding my kids healthful food, especially when it’s solid protein, because they seem to “need” food allthetime, and protein helps keep them at bay a lot longer than carbs, and even better when those protein filled foods are quick and easy, like Simek’s meatballs. I grew up on meatballs…pair them with some buttered noodles and you have some serious comfort food. We prefer to throw a bunch of veggies next to them so they are getting a well rounded, healthful meal. I also love using them as quick and easy solutions for appetizers when friends come over at the last minute. I threw this meal together in less than 20 minutes, including homemade gravy!
As much as my kids think they need food every 20 minutes, they have no idea how many kids in the world are truly in need of food. No idea that while they whine for more goldfish, children across the world from them eat cakes made of mud, just so they won’t have hunger pains and can get a few hours of sleep at night.
As they age, we teach them about these things, but the truth is that they’re still quite young and have a hard time understanding. One organization our family has always been thrilled to support is Feed My Starving Children, so I was so happy to find out that Simek’s has team up with them to provide thousands of meals for those children around the globe.
