Peanut Butter Protein Bites

If you’re anything like me you are constantly looking for quick, easy, make-ahead, healthful snacks to have on hand for the family.  My appetite has been obscenely large these days…as my new nursing journey has begun…and these nummy bites have been quite the lifesaver.  They are packed with natural protein and fiber and I can assure you even your littles will adore them.  Aside from being an awesome snack that is sure to sustain they make a wonderful transportable breakfast on those need-to-get-out-of-the-house-as-quickly-as-possible-because-we-are-already-20-minutes-late days.  They’re sweet, slightly salty, dense and a tiny bit crunchy all in one pretty darn cute little package.

On a separate note, if you are looking to encourage sharing with your toddlers these are probably not the solution.  This is how it went down this morning as I gave my daughter, Georgia, the last one:  Can mommy have a bite, honey?  Pleeeeeaaaase?  Georgia you need to share…I’ll make more.  Did you just put that whole thing in your mouth?  Georgia 1, Me 0.  Easy, quick, healthful and they taste like dessert?  Yes PLEASE.

Peanut Butter Protein Bites

Ingredients

1 Cup Quick Cook Oats

1/2 Cup Peanut Butter

1/4 Cup Ground Flaxseed

1/4 Cup Almond Meal

1/4 Cup Chopped Pecans

1/4 Cup Honey or Pure Maple Syrup

2 Tablespoons Raisins

2 Tablespoons Unsweetened Applesauce

1/8 Teaspoon Salt


Directions:
Melt the peanut butter for 30 seconds in the microwave.  Mix all ingredients together in a large bowl until well combined.  Roll into tablespoon-size balls and chill until they are set and firm.  Store in the refrigerator.  Makes about 15.

These look wonderful and so simple. I pinned this and cannot wait to make them with my toddler. I know he will love to help me make (and eat) them! 🙂

I’ve made something along these lines, but they were baked. I’m very intrigued with the “raw” factor. They are on the list for this week! Thanks for sharing.

Michelle-what a great idea! You absolitely could try it, I bet it would be delish. Just make sure you’re using finely shredded coconut so it wil bind together. Let me know how it goes!
