Parmesan Chicken

When this recipe was handed over to me, I have to be honest, I was skeptical.  How can such few ingredients and such little time yield something my family will enjoy?  I knew it was a quickie so I saved it for a crazy schedule day at our house.  I vowed to not even step foot in the kitchen until my husband sent his daily “on way” text that evening (typing that makes me feel like we are borderline elderly…so much for spontaneity!).

Most days, dinner has been in the works for quite some time  when he texts and if it hasn’t been I thank the heavens for my convection oven.  He walks in the door greeted by my  screaming 3-year-old daughter who is so happy to see him you’d think she was greeting Dora and myself, forking over a quick kiss immediately followed by handing over our baby boy so I can focus on dinner and get it on the table.

So on this day, at 5:30, I headed into the kitchen to begin dinner.  And 27 minutes later, as my husband walked in the door, dinner was ON THE TABLE.  Yes, folks, on the table, waiting.  I’m talking the table set, food plated, drinks filled, kids buckled in and bellied up kind of  on the table.   So, this recipe right here?  For sure winning material.  I served it over a bed of mixed greens and cherry tomatoes and it made an awesome warm salad.  The hot chicken wilted the greens just slightly and the crispy, gooey topping made for the perfect dressing.  4 itty bitty ingredients, 20 minutes and happy bellies all around in this house.  Its already been added to our monthly meal rotation.

Parmesan Crusted Chicken

Ingredients:

  • 1/2 cup Helman’s or Best Foods Real Mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 4 boneless, skinless chicken breast halves (about 1 1/4 lbs.)
  • 4  teaspoons Italian seasoned dry bread crumbs

Preheat oven to 450 degrees F. Combine Hellmann’s or Best Foods Real Mayonnaise with cheese in medium bowl.

Arrange chicken on baking sheet. Evenly top with mayonnaise mixture, then sprinkle with bread crumbs.

Bake 20 minutes or until chicken is thoroughly cooked.
