School is back in full effect, mamas.  And that means crazy, busy days are happening.  After school activities around this time of year can often put a damper on dinner plans, no?  But I’ve got the perfect solution!

These sandwiches…oh, my heavens.  This have been such a hit on my blog, Nourished Peach, and I wanted to share the love with you all too.  Hands down, this is my kiddos favorite meal.  And hands down, it’s my easiest meal to serve…a very, very fabulous combo.

So simple to do. First, assemble your sandwiches:  add ham, swiss and a healthy dose of sweet and savory honey mustard sauce right on top.

Then, all that’s left to do is wrap them in foil and pop them in the oven. The croissants come out just slightly crisp around the edges while the middles are just perfectly buttery and soft. And all of the goodies inside? Well…savory, salty, sweet, decadent, gooey deliciousness.

So yes, they taste amazing. But my favorite part? You can make them up to a couple of days ahead of time for those nutso-in-and-out-running-around nights. Just assemble them, wrap them in foil and store them in your refrigerator. When you’re ready to gobble them up, all you need to do is pop them in the oven for about 15 minutes. Yes? YES!

Maple Mustard Baked Ham and Cheese Croissants

notes: these really are delicious with regular hamburger buns so feel free to try them that way, too. we just love a good croissant around here so we tend to go that route. they work great with mini croissants as well.

Ingredients:

  • 4 Croissants, sliced
  • 1/2 Pound Sliced Ham
  • 2 Cups Shredded Swiss Cheese
  • 2 Tablespoons Mayonaise
  • 2 Tablespoons Mustard
  • 2 Teaspoons Pure Maple Syrup

Directions:

Open croissants and lay on a work surface. Divide half of the cheese among the bottom of the croissants, top with sliced ham and finish with the remaining cheese.

In a small bowl whisk the mayonnaise, mustard and maple syrup together until well combined. Drizzle the sauce over the tops and put the lids on. Wrap each sandwich loosely in foil (but make sure the edges are sealed). Place foil packets on a baking sheet and bake at 375 for 15 minutes or until cheese is melted and edges of the croissants crisp up just slightly. Serves 4.
