The reason I call this life changing is because you will be absolutely amazed at how simple, fast and delicious this family favorite is. I would have to say this is one of the most common recipes I am asked to share and for valid reasons, in my humble opinion 🙂 Top notch grub, right here, friends.
For those of you who do not follow my personal blog I am just simply a lover of food in all forms. I am also very consciencous about what kinds of food I offer my family and am always looking for a more nourishing way to prepare dishes without compromising an ounce of taste. I am a believer in REAL food. Real fruits and veggies, real fat and lots of real protein. And while there are certain times that I do drift away from that mentality I make it a point to just stay mindful of how I am fueling myself and my family. After all, what we eat sets the bar for our health and quality of life…and if I could give my husband, daughter and I a billion healthy years together I absolutely would.
We have all been guilty of buying boxed macaroni and cheese..it is so fast and simple. But, in my opinion, it just doesn’t compare to the taste of homemade mac with real cheese and it contains too many additives and dyes to feed my family on a regular basis. This recipe is the best of all worlds. As easy and simple as the boxed version (literally), so incredibly tasty and so much more healthful. In this recipe, and in most pasta recipes I prepare, I choose to use either quinoa pasta or brown rice pasta (both available in the health or gluten free aisles of your grocer) because their health profiles outweigh that of white pasta…and they are also both gluten free if you are trying to watch your gluten intake. And shhhhh…don’t even bother telling your family…they’ll never know the difference. It can be our little secret 😉 I also find it a great opportunity to add veggies such as chopped spinach, peas or broccoli. Play around with it…the options are endless!
Life Changing Mac and Cheese
2 Cups Brown Rice or Quinoa Elbow Macaroni
1 1/4 Cups Milk
2 Ounces Cream Cheese
2 3/4 Cups Shredded Sharp Cheddar Cheese
2 Cups Packed Baby Spinach, chopped *optional
Salt + Pepper to taste
Bring a pot of water to a boil. Add a pinch of salt and pasta and cook, stirring occasionally, until pasta is just cooked through but still has a firm texture to it, about 10 minutes (pasta will cook a tad more in the sauce). Drain.
Pour pasta back in the pot and stir in milk, cheeses and spinach, if using. Cook, over medium heat stirring frequently, until cheeses are melted and sauce has thickened, about 5 minutes. Feel free to add more milk if it needs more liquid and season with salt and pepper, to taste. Serves 4
