Sometimes it just has to be sandwiches for dinner. We need something fast. Something transportable. Something that we can count on our kids eating. Did I mention something easy?
This recipe is one way we like to doctor up sandwiches for dinner. It’s so simple…so fast…and definitely something you can count on your kids devouring. The garlic aioli takes a sandwich from good to over the top with just a dollop.
Chicken Club Sandwiches with Simple Garlic Aioli
Ingredients
For the Aioli:
1/2 Cup Mayonaise
1 Garlic Clove, grated or pressed
2 Tablespoons Fresh Lemon Juice
1 Tablespoon Olive Oil
1/2 Teaspoon Salt
1/4 Teaspoon Black Pepper
For the Sandwich:
8 Slices Sandwich Bread (we opt for sprouted grain bread)
2 Cups Shredded Chicken (store bought rotisserie can be a huge time saver here)
1 Avocado, mashed
1 Tomato, sliced
4 Slices Cheddar Cheese
Baby Spinach Leaves, optional
Directions
For the Aioli:
Place all ingredients in a large bowl and whisk well until combined. Set aside or store in an air tight container in the refrigerator.
For the sandwiches:
Lightly toast the bread. Spread the avocado on 4 of the slices, set aside. On the remaining 4 slices, layer the cheese, spinach, chicken, tomato and a spoonful of the aioli. Place the avocado slices of bread on top and serve. Makes 4 sandwiches.
