These little bites of yum are my saving grace for breakfasts on the go. It feels SO good to know that I can give my kiddos a quick breakfast that also equals healthful.
If you are a fan of Larabars you are going to dig these. They’ve got a soft, chewy texture, they taste like a sweet treat and they are perfectly portable. Icing on the cake bites? They are about a zillion times cheaper to make yourself and as simple as throwing a few ingredients into a food processor and pushing a button. I’m sold, and so are my kids!
Notes: Medjool dates can be found in the produce section of most supermarkets. Also, making this recipe your own is super simple to do. Don’t care for cashews? Try almonds or pecans. Not a fan of coconut? Eliminate it. Try adding chocolate chips. Or almond butter instead of peanut butter…the options are endless!

Coconut Cashew Bites
Ingredients
2 Cups Medjool Dates, pitted
2 Cups Raw Cashew Halves or Pieces
1/2 Cup Unsweetened Peanut Butter
3 Tablespoons Water
1/4 Cup Unsweetened Coconut Flakes
2 Tablespoons Flax Meal, optional
1/4 Teaspoon Sea Salt
Directions
Place the dates, cashews and peanut butter into the bowl of a food processor. Process for 1-2 minutes or until the dates and cashews are finely ground (there will be some small cashew pieces still intact). Add in the coconut, flax and sea salt, and process for another minute or until the mixture resembles a semi-crumbly dough. Scoop by heaping tablespoons and roll into balls. Store in the fridge for up to two weeks.
